Specific Carbohydrate Diet
Because Luke had been diagnosed with SIBO (small intestinal bacterial overgrowth) he had to follow a six week treatment plan. He took herbal antibiotics (oil of oregano and candibactin) for four weeks. In week 2, he took two strong medical antibiotics. He ate his regular diet. In week 3, he, Elise, Dad and I all started the SCD diet which we did for four weeks. Elise likely has SIBO as well. This meant no sweetener except honey, no grain at all, no potatoes or corn, no dairy, no beef, nothing artificial. Everything made from scratch. Wow-not easy!
Luke gave Elise his desk. These two were quite bonded this month and encouraged each other.

Coconut flour cinnamon muffins became the staple lunch to pack. John Calvin School is nut-free- but I had permission to send nut flour items for a month.
Cream of mushroom soup- really good! And Elise and I got the whole pan to share.
I took pity on Caleb and made him some fresh buns. He was happy.
The hardest part of this month was other people giving my kids food. Elise had three birthday parties (Haley Kolstad, Amanda, and Lacey) plus teachers and classmates giving her candy or Timbits. Luke had a classmate bring donuts for everyone and also candies.
Dad loved this diet, felt great, and lost a few pounds. He wouldn’t mind continuing- but I felt burned out of creating tasty meals with such limitations.
We made it to the end. Sadly, Luke still had stomach aches, so he went to Dr. Kroeze. X-rays showed him to be severely constipated. 😢. Discouraging! We don’t know if it’s from not drinking enough, food sensitivities, or a medical problem. I’ll keep trying to get the root of his problem.
